Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 apples, peeled, cored, and chopped into small pieces
  • 1 tablespoon brown sugar (for sprinkling)
  • 1 teaspoon cinnamon (for sprinkling)
  • ½ cup powdered sugar
  • 1 tablespoon milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, beat together the eggs, vegetable oil, vanilla, and milk until smooth.
  4. Add the wet ingredients to the dry ingredients and stir just until combined (do not overmix).
  5. Pour half of the batter into the prepared loaf pan.
  6. Evenly sprinkle half of the chopped apples on top, followed by half of the brown sugar–cinnamon mixture.
  7. Pour the remaining batter over this layer and spread gently.
  8. Top with the remaining apples and brown sugar–cinnamon mixture.
  9. Gently swirl a knife through the top layer to create a marbled effect.
  10. Bake in the preheated oven for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  12. In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth.
  13. Drizzle the glaze over the cooled bread.
  14. Let it set for 10–15 minutes before slicing.

Notes

  • Best served fresh but will stay moist for 3 days at room temp or up to 1 week refrigerated.
  • Warm slices briefly in the microwave for that fresh-baked taste.
