A delicious and moist Amish Apple Fritter Bread filled with apples and topped with a sweet glaze.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ cup milk
- 2 apples, peeled, cored, and chopped into small pieces
- 1 tablespoon brown sugar (for sprinkling)
- 1 teaspoon cinnamon (for sprinkling)
- ½ cup powdered sugar
- 1 tablespoon milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, beat together the eggs, vegetable oil, vanilla, and milk until smooth.
- Add the wet ingredients to the dry ingredients and stir just until combined (do not overmix).
- Pour half of the batter into the prepared loaf pan.
- Evenly sprinkle half of the chopped apples on top, followed by half of the brown sugar–cinnamon mixture.
- Pour the remaining batter over this layer and spread gently.
- Top with the remaining apples and brown sugar–cinnamon mixture.
- Gently swirl a knife through the top layer to create a marbled effect.
- Bake in the preheated oven for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth.
- Drizzle the glaze over the cooled bread.
- Let it set for 10–15 minutes before slicing.
Notes
- Best served fresh but will stay moist for 3 days at room temp or up to 1 week refrigerated.
- Warm slices briefly in the microwave for that fresh-baked taste.
- Granny Smith or Honeycrisp apples work great for a balance of tart and sweet.
