- 2 cups peeled, cored, and diced apples (Granny Smith or Honeycrisp work beautifully)
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Prepare the apples: Peel, core, and dice the apples into small chunks. You want the pieces small enough to soften while cooking, but large enough to give each bite texture and fruitiness.
- Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. These spices give the batter its warm, apple-fritter flavor.
- Whisk the wet ingredients: In a separate bowl, beat the eggs, then add the granulated sugar, brown sugar, milk, vanilla extract, and melted butter. Stir until smooth.
- Combine the batter: Pour the wet ingredients into the dry, and gently mix until just combined. Fold in the diced apples—don’t overmix or the batter can become dense.
- Cook the waffles: Heat your waffle maker and grease it lightly. Add about ⅓ to ½ cup of batter per waffle (depending on your machine) and cook until golden brown and crisp, about 4–5 minutes. Let cool slightly on a wire rack.
- Glaze them: Whisk together powdered sugar, milk, and vanilla to create a smooth glaze. Dip each waffle donut into the glaze or drizzle generously over the tops. Let the glaze set for a few minutes before serving.
