- ½ cup (1 stick) unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp ground cinnamon
- 1 ½ cups diced apple (peeled and chopped, Honeycrisp or Granny Smith work great)
- 2 tbsp granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- In a bowl, whisk together melted butter and brown sugar until smooth. Add egg and vanilla, whisk until combined.
- In a separate bowl, whisk flour, baking powder, salt, and cinnamon. Stir dry ingredients into wet mixture until just combined (don’t overmix). Fold in the diced apples.
- Spread batter evenly into the prepared pan. Mix granulated sugar and cinnamon for topping, then sprinkle evenly over batter.
- Bake for 28–32 minutes, until a toothpick comes out mostly clean (a few moist crumbs are fine).
- Let bars cool completely before slicing into squares. Enjoy as-is or warm with vanilla ice cream for a fall dessert dream!
