Ingredients

  • 4 cups shredded green cabbage (or coleslaw mix)
  • 2 cups shredded cooked chicken (rotisserie works great)
  • 1 cup shredded carrots
  • 1 cup canned mandarin oranges, drained
  • ½ cup dried cranberries
  • ½ cup sliced almonds (toasted if possible)
  • ¼ cup chopped green onions
  • ¼ cup chopped red onion
  • 1 package crunchy chow mein noodles (optional but delicious)
  • 1 tablespoon poppy seeds (optional)
  • For the Asian Dressing:
  • ⅓ cup vegetable oil (or avocado oil)
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Make the Dressing: In a bowl or jar, whisk together oil, rice vinegar, soy sauce, honey, sesame oil, lime juice, ginger, garlic, salt, and pepper. Shake or whisk until smooth, then set aside.
  2. Assemble the Salad: In a large salad bowl, combine cabbage, shredded chicken, carrots, mandarin oranges, dried cranberries, almonds, green onion, red onion, and poppy seeds (if using). Toss gently to mix.
  3. Add Dressing: Pour the dressing over the salad and toss until everything is evenly coated.
  4. Add Crunch: Right before serving, mix in chow mein noodles (you can also serve them on top so they stay extra crunchy).

Notes

  • Best served immediately after adding the noodles.
  • For meal prep, keep the dressing and noodles separate until ready to eat.
