A refreshing and vibrant Asian Chicken Cranberry Salad that combines crunchy vegetables, tender chicken, and a tangy dressing for a delightful meal.

- 4 cups shredded green cabbage (or coleslaw mix)
- 2 cups shredded cooked chicken (rotisserie works great)
- 1 cup shredded carrots
- 1 cup canned mandarin oranges, drained
- ½ cup dried cranberries
- ½ cup sliced almonds (toasted if possible)
- ¼ cup chopped green onions
- ¼ cup chopped red onion
- 1 package crunchy chow mein noodles (optional but delicious)
- 1 tablespoon poppy seeds (optional)
- For the Asian Dressing:
- ⅓ cup vegetable oil (or avocado oil)
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 tablespoon fresh lime juice
- 1 teaspoon grated fresh ginger
- 1 teaspoon garlic (minced)
- Salt & pepper to taste
Instructions
- Make the Dressing: In a bowl or jar, whisk together oil, rice vinegar, soy sauce, honey, sesame oil, lime juice, ginger, garlic, salt, and pepper. Shake or whisk until smooth, then set aside.
- Assemble the Salad: In a large salad bowl, combine cabbage, shredded chicken, carrots, mandarin oranges, dried cranberries, almonds, green onion, red onion, and poppy seeds (if using). Toss gently to mix.
- Add Dressing: Pour the dressing over the salad and toss until everything is evenly coated.
- Add Crunch: Right before serving, mix in chow mein noodles (you can also serve them on top so they stay extra crunchy).
Notes
- Best served immediately after adding the noodles.
- For meal prep, keep the dressing and noodles separate until ready to eat.
- Optional add-ins include edamame, cucumbers, fresh cilantro, sesame seeds, and sliced bell peppers.
