A hearty and delicious beef and beet soup made with fresh ingredients.
Ingredients

- 10 cups water
- 1 lb beef chuck
- 3 medium beets, peeled and grated
- 2 carrots, peeled and grated
- 1 onion, finely chopped
- 2 tablespoons tomato paste
- 2 medium potatoes, diced
- ½ head cabbage, shredded
- 2 bay leaves
- 2 garlic cloves, minced
- Salt, to taste
- Pepper, to taste
- Fresh dill, chopped (for garnish)
- Sour cream (for serving)
Instructions
- In a large stockpot, add 1 lb beef chuck and 10 cups of water. Bring to a boil, skimming off foam. Simmer for 1 hour until tender. Remove beef, chop, and return to pot.
- Meanwhile, peel and grate 3 beets and 2 carrots. Chop 1 onion finely.
- In a skillet, heat oil and sauté onion for 2 minutes. Add carrots and beets, cook 5 minutes. Stir in 2 tablespoons tomato paste and cook 3 more minutes.
- Add 2 diced potatoes and 2 bay leaves to broth. Simmer 10 minutes.
- Add ½ head shredded cabbage and the sautéed vegetables. Simmer 15 minutes.
- Stir in 2 minced garlic cloves, salt, and pepper to taste. Simmer 5 minutes more. Remove bay leaves.
- Serve hot with sour cream and fresh dill on top.
Notes
- For added flavor, consider using beef broth instead of water.
- This soup can be made in advance and reheated.
