Beef and Beet Soup

Description

A hearty and delicious beef and beet soup made with fresh ingredients.


Ingredients

  • 10 cups water
  • 1 lb beef chuck
  • 3 medium beets, peeled and grated
  • 2 carrots, peeled and grated
  • 1 onion, finely chopped
  • 2 tablespoons tomato paste
  • 2 medium potatoes, diced
  • ½ head cabbage, shredded
  • 2 bay leaves
  • 2 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh dill, chopped (for garnish)
  • Sour cream (for serving)

Instructions

  1. In a large stockpot, add 1 lb beef chuck and 10 cups of water. Bring to a boil, skimming off foam. Simmer for 1 hour until tender. Remove beef, chop, and return to pot.
  2. Meanwhile, peel and grate 3 beets and 2 carrots. Chop 1 onion finely.
  3. In a skillet, heat oil and sauté onion for 2 minutes. Add carrots and beets, cook 5 minutes. Stir in 2 tablespoons tomato paste and cook 3 more minutes.
  4. Add 2 diced potatoes and 2 bay leaves to broth. Simmer 10 minutes.
  5. Add ½ head shredded cabbage and the sautéed vegetables. Simmer 15 minutes.
  6. Stir in 2 minced garlic cloves, salt, and pepper to taste. Simmer 5 minutes more. Remove bay leaves.
  7. Serve hot with sour cream and fresh dill on top.

Notes

  • For added flavor, consider using beef broth instead of water.
  • This soup can be made in advance and reheated.
