A delicious twist on the classic grilled cheese, featuring creamy brie, sweet blackberry balsamic reduction, and crispy sourdough bread.

- 4 slices sourdough bread (or artisan bread of choice)
- 4 oz Brie cheese, sliced (rind optional)
- 1 cup fresh blackberries
- 1 tbsp balsamic vinegar
- 1 tbsp honey (or maple syrup)
- 1 tbsp unsalted butter, softened
- 1–2 tsp fresh thyme leaves (optional, for garnish)
Instructions
- In a small saucepan, add blackberries, balsamic vinegar, and honey. Cook over medium heat, gently mashing the berries until they break down into a thick, jam-like consistency (about 5–7 minutes). Remove from heat and let cool slightly.
- Spread butter on one side of each bread slice. On the unbuttered side, layer brie cheese slices and a generous spoonful of the blackberry balsamic mixture. Top with another slice of bread, buttered side facing out.
- Heat a skillet or griddle over medium-low heat. Cook each sandwich for 3–4 minutes per side until the bread is golden and crispy, and the brie is melted and gooey.
- Slice in half, garnish with fresh thyme if desired, and serve warm.
Notes
- Add a few slices of prosciutto for a savory twist.
- Swap sourdough for ciabatta or French bread for a different texture.
- A drizzle of extra balsamic glaze over the top makes it extra decadent.
