Description

A creamy and cheesy broccoli casserole that is perfect as a side dish or a main meal.


Ingredients

  • 56 cups fresh broccoli florets (or 2 bags frozen)
  • Salt (for boiling water)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella or Monterey Jack
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 1 cup breadcrumbs (Panko preferred)
  • 2 tbsp melted butter
  • 1/4 cup grated Parmesan (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or blanch broccoli until just tender-crisp (about 3–4 minutes). Drain well and spread in a greased baking dish.
  3. In a saucepan, melt 3 tbsp butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  4. Slowly whisk in milk and cook, stirring, until thickened (3–5 minutes).
  5. Add cheddar, mozzarella, garlic powder, onion powder, salt & pepper. Stir until melted and smooth.
  6. Pour cheese sauce evenly over broccoli.
  7. Mix breadcrumbs, melted butter, and Parmesan. Sprinkle over casserole.
  8. Bake for 20–25 minutes until bubbly and golden brown on top. Let sit for 5 minutes before serving.

Notes

  • Add cooked rice or pasta for a full meal.
  • Mix in shredded chicken or bacon for added protein.
  • Add extra cheddar on top for an ultra-cheesy version.
  • Make it spicy with a pinch of cayenne or red pepper flakes.
  • Refrigerate leftovers for 3–4 days or freeze (before baking preferred) for up to 3 months.
  • Reheat covered at 350°F for 20 minutes.
