A creamy and flavorful Cajun Cream Cheese Chicken Pasta dish that combines tender chicken, pasta, and a rich sauce for a delightful meal.

- 2 large chicken breasts, diced
- 2 tbsp Cajun seasoning (divided)
- 2 tbsp olive oil or butter
- 12 oz rotini pasta (or penne)
- 1 red bell pepper, chopped
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- ½ cup shredded parmesan cheese
- 1 cup chicken broth
- 2 cloves garlic, minced
- Salt & pepper to taste
- Fresh parsley or green onions, for garnish
Instructions
- Boil pasta in salted water until al dente. Drain and set aside.
- Toss diced chicken in 1 tbsp Cajun seasoning.
- Heat olive oil in a large skillet and sauté chicken until golden brown and cooked through. Remove and set aside.
- In the same skillet, add butter or a bit more oil.
- Sauté garlic and bell pepper for 2–3 minutes.
- Add cream, chicken broth, and cream cheese. Stir until smooth and creamy.
- Mix in 1 tbsp Cajun seasoning, parmesan, and half of the mozzarella. Stir until melted and thickened.
- Add the cooked chicken and pasta to the sauce. Stir to coat everything evenly.
- Pour into a greased baking dish. Top with remaining mozzarella cheese.
- Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.
- Sprinkle with chopped parsley or green onions and serve hot!
Notes
- For extra heat: add cayenne pepper or smoked paprika.
- Add veggies like spinach, mushrooms, or tomatoes.
- Swap chicken for shrimp or sausage for a Cajun twist.
