Description

This delicious carrot cake is perfect for any occasion!


Ingredients

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ½ cup vegetable oil
  • 2 cups shredded carrots (freshly grated)
  • ½ cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until well combined.
  3. Create a well in the center and add eggs, vegetable oil, and shredded carrots. Stir until just mixed.
  4. If using, fold in chopped nuts for added crunch.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with cream cheese frosting if desired.
