- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking powder
- 2 tsp ground cinnamon
- ½ tsp salt
- 2 large eggs (room temperature)
- ½ cup vegetable oil
- 2 cups shredded carrots (freshly grated)
- ½ cup chopped walnuts or pecans (optional)
- Cream cheese frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until well combined.
- Create a well in the center and add eggs, vegetable oil, and shredded carrots. Stir until just mixed.
- If using, fold in chopped nuts for added crunch.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool completely before frosting with cream cheese frosting if desired.

- The cake can be kept in the refrigerator for up to a week.
- It is best enjoyed after being refrigerated for a few hours.
