- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 cup beef broth
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1 cup shredded cheddar cheese, divided
- ½ cup sour cream
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp garlic powder
- Fresh parsley (optional garnish)
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Add diced onion and garlic and sauté until softened. Drain excess fat.
- Stir in cooked rice, cream of mushroom soup, sour cream, beef broth, paprika, salt, pepper, garlic powder, and ½ cup cheddar cheese. Mix until well combined and creamy.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased 9×9 casserole dish. Top with remaining ½ cup cheddar. Bake for 20–25 minutes until hot, bubbly, and cheese is melted.
- Garnish with parsley and serve warm as a full meal or side dish.
Notes
- Feel free to substitute cream of mushroom soup with cream of chicken if preferred.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
