Ingredients
Scale
For the Chicken:
- 1 whole chicken, cut into pieces (or 4–6 bone-in, skin-on chicken thighs)
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
For the Garlic Parmesan Coating:
- 4 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil or melted butter
- ½ tsp red pepper flakes (optional, for heat)
For the Balsamic Glaze:
- ¼ cup balsamic vinegar
- 1 tbsp olive oil
Instructions
Step 1: Prep the Chicken
- Preheat oven to 450°F (230°C).
- Pat the chicken dry with paper towels and rub it with olive oil, salt, pepper, oregano, thyme, and garlic powder.
- Let it sit at room temperature for 15 minutes to absorb the flavors.
Step 2: Roast Until Crispy
- Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken skin-side down for 3–4 minutes until golden brown.
- Flip the chicken and transfer the skillet to the preheated oven.
- Roast for 25–30 minutes, until the skin is crispy and the internal temperature reaches 165°F (75°C).
Step 3: Add the Garlic Parmesan Coating
- While the chicken is roasting, mix together garlic, Parmesan, olive oil (or butter), and red pepper flakes in a small bowl.
- Remove the chicken from the oven and spread the garlic-Parmesan mixture over the top of each piece.
Step 4: Finish with Balsamic Glaze
- Drizzle balsamic vinegar and olive oil over the chicken.
- Return to the oven for 5 more minutes to let the flavors meld.
Step 5: Serve & Enjoy!
- Let the chicken rest for 5 minutes, then serve with extra Parmesan and fresh herbs.
- Pair with roasted veggies, pasta, or crusty bread for a complete meal.
Notes
- For extra crispy skin, broil for 2–3 minutes at the end.
- Want a spicier version? Add extra red pepper flakes or a dash of cayenne to the seasoning.
- No balsamic vinegar? Swap with red wine vinegar or a squeeze of fresh lemon juice.
- For an air fryer version, cook at 380°F (195°C) for 20–25 minutes, flipping halfway.
- Leftovers: Store in the fridge for up to 4 days and reheat in the oven at 375°F (190°C) for 10 minutes.
