For the Chicken:

  • 1 whole chicken, cut into pieces (or 46 bone-in, skin-on chicken thighs)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder

For the Garlic Parmesan Coating:

  • 4 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil or melted butter
  • ½ tsp red pepper flakes (optional, for heat)

For the Balsamic Glaze:

  • ¼ cup balsamic vinegar
  • 1 tbsp olive oil

Instructions

Step 1: Prep the Chicken

  1. Preheat oven to 450°F (230°C).
  2. Pat the chicken dry with paper towels and rub it with olive oil, salt, pepper, oregano, thyme, and garlic powder.
  3. Let it sit at room temperature for 15 minutes to absorb the flavors.

Step 2: Roast Until Crispy

  1. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
  2. Sear the chicken skin-side down for 3–4 minutes until golden brown.
  3. Flip the chicken and transfer the skillet to the preheated oven.
  4. Roast for 25–30 minutes, until the skin is crispy and the internal temperature reaches 165°F (75°C).

Step 3: Add the Garlic Parmesan Coating

  1. While the chicken is roasting, mix together garlic, Parmesan, olive oil (or butter), and red pepper flakes in a small bowl.
  2. Remove the chicken from the oven and spread the garlic-Parmesan mixture over the top of each piece.

Step 4: Finish with Balsamic Glaze

  1. Drizzle balsamic vinegar and olive oil over the chicken.
