These chocolate peanut butter oatmeal bars are the perfect balance of wholesome and indulgent. Made with hearty oats, creamy peanut butter, and rich chocolate, they are easy to prepare and ideal for snacks, dessert, or make-ahead meal prep.

- 1 cup creamy peanut butter (natural or regular)
- ½ cup honey or maple syrup
- ¼ cup melted coconut oil or unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1½ cups rolled oats
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup chocolate chips (dark or semi-sweet)
Instructions
- Preheat the oven to 175°C / 350°F. Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- In a large bowl, whisk together peanut butter, honey (or maple syrup), melted oil, egg, and vanilla until smooth.
- Stir in the oats, baking soda, and salt until fully combined. The mixture will be thick.
- Press about two-thirds of the oatmeal mixture evenly into the prepared pan.
- Sprinkle chocolate chips evenly over the base. Crumble the remaining oatmeal mixture on top.
- Bake for 18–22 minutes, or until lightly golden around the edges and just set in the center.
- Allow bars to cool completely before slicing for clean edges.
Notes
- For softer bars, slightly underbake and allow them to set while cooling.
- Use natural peanut butter for a cleaner ingredient list.
- Dark chocolate pairs especially well with oats and peanut butter.
- Store in an airtight container at room temperature for up to 3 days.
- Refrigerate for up to 7 days.
- Freeze sliced bars for up to 2 months.
