- 2 large eggs
- ¼ cup milk (whole or 2%)
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1 Tbsp butter (for cooking)
- The icing packet from the cinnamon roll can
- Optional: maple syrup or powdered sugar
Instructions
- Prep the Cinnamon Rolls: Open the can of cinnamon rolls and set aside the icing packet. Cut each cinnamon roll into quarters (4 small pieces each) to make bite-sized pieces.
- Make the French Toast Mixture: In a medium bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth. Add the cinnamon roll pieces to the egg mixture and gently stir to coat. Let them soak for 2–3 minutes to absorb some custard.
- Cook the Bites: Heat a large nonstick skillet over medium heat and melt the butter. Place the soaked cinnamon roll pieces in the skillet, cut side down, without crowding. Cook 2–3 minutes per side, turning gently, until all sides are golden brown and the center is cooked through (about 6–8 minutes total).
- Add the Glaze: Warm the reserved icing packet slightly (5–10 seconds in the microwave) so it’s pourable. Stack the French toast bites on a plate and drizzle with the warm icing. Optional: add maple syrup or dust with powdered sugar.

- Best served fresh and warm.
- If making ahead, reheat in the oven at 300°F (150°C) for 5–8 minutes before serving.
