Description

A delicious cheesy broccoli rice casserole that’s easy to make and perfect for any meal.


Ingredients

  • 4 cups broccoli florets
  • 2 cups cooked white rice
  • 2 cups shredded cheddar cheese
  • 4 tbsp butter
  • 1 small onion, chopped
  • 2 cups milk
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Lightly steam broccoli for 3 to 4 minutes until tender crisp then set aside.
  3. In a saucepan, melt butter over medium heat then add onion and cook until soft.
  4. Whisk in flour and cook for 1 minute then slowly add milk while whisking until thick.
  5. Season with salt, pepper, and paprika then stir in 1½ cups cheese until melted.
  6. Combine rice, broccoli, and cheese sauce in a bowl then transfer to baking dish.
  7. Top with remaining cheese and bake for 30 to 35 minutes until bubbly and golden.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add a pinch of cayenne pepper.
