These Confetti Cake Mix Cookies are easy to make and perfect for any festive occasion. They are soft, melt-in-your-mouth treats with a nostalgic cake mix flavor.

- 1 box vanilla or funfetti cake mix (15.25 oz)
- 1/2 cup melted butter (or vegetable oil)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup white chocolate chips (optional but sooo good)
- 1/4 cup holiday sprinkles
- For the frosting:
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 2 tbsp heavy cream (or milk)
- 1 tsp vanilla extract
- Pinch of salt
- Extra holiday sprinkles for topping
Instructions
- In a bowl, combine cake mix, melted butter (or oil), eggs, and vanilla. Stir until a soft, thick dough forms. Fold in sprinkles + white chocolate chips.
- Pop the dough in the fridge for 20–30 minutes — this helps keep them thick and puffy.
- Preheat oven to 350°F (175°C). Scoop dough into balls (about 2 tbsp each) and place on a baking sheet. Bake 9–11 minutes until the edges are set but the centers still look soft. Cool completely before frosting.
- Beat softened butter until fluffy. Add powdered sugar gradually. Mix in vanilla + cream + pinch of salt. Whip until smooth, creamy, and spreadable.
- Slather thick frosting on each cookie. Add sprinkles like it’s Christmas morning.
