Ingredients

  • ½ cup (1 stick) unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes (adjust to heat preference)
  • ½ tsp cayenne pepper (optional for extra spice)
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • Salt & black pepper, to taste
  • 12 oz linguine pasta
  • 1 ½ lbs boneless skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • ½ cup grated Parmesan cheese
  • Extra chopped parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Season chicken with Italian seasoning, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–7 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter over medium heat. Add garlic and sauté until fragrant (about 1 minute). Stir in Dijon mustard, smoked paprika, red pepper flakes, cayenne, lemon juice, lemon zest, and parsley. Season with salt and pepper.
  4. Add the cooked linguine to the skillet with the cowboy butter sauce. Toss until pasta is well coated, adding a splash of reserved pasta water if needed to loosen the sauce. Stir in Parmesan cheese until creamy. Add chicken back into the skillet and toss to combine.
  5. Garnish with extra parsley and Parmesan. Serve hot with garlic bread or a side salad.
