A delicious and flavorful Cowboy Butter Chicken Linguine recipe that combines tender chicken, linguine pasta, and a rich butter sauce.

- ½ cup (1 stick) unsalted butter
- 4 cloves garlic, minced
- 1 tsp Dijon mustard
- ½ tsp smoked paprika
- ½ tsp red pepper flakes (adjust to heat preference)
- ½ tsp cayenne pepper (optional for extra spice)
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- Salt & black pepper, to taste
- 12 oz linguine pasta
- 1 ½ lbs boneless skinless chicken breasts (or thighs), cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt & pepper, to taste
- ½ cup grated Parmesan cheese
- Extra chopped parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- Season chicken with Italian seasoning, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt the butter over medium heat. Add garlic and sauté until fragrant (about 1 minute). Stir in Dijon mustard, smoked paprika, red pepper flakes, cayenne, lemon juice, lemon zest, and parsley. Season with salt and pepper.
- Add the cooked linguine to the skillet with the cowboy butter sauce. Toss until pasta is well coated, adding a splash of reserved pasta water if needed to loosen the sauce. Stir in Parmesan cheese until creamy. Add chicken back into the skillet and toss to combine.
- Garnish with extra parsley and Parmesan. Serve hot with garlic bread or a side salad.

- Swap linguine for fettuccine or spaghetti.
- Add spinach, mushrooms, or sun-dried tomatoes for extra flavor.
- Use shrimp instead of chicken for a seafood twist.
