Description

Ingredients

  • 1 lb beef steak (ribeye or sirloin), thinly sliced
  • 1 tsp cracked black pepper
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic, smashed and minced
  • 1 package (9 oz) cheese tortellini
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated parmesan cheese
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • ¼ tsp paprika
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season and sear the steak your beef steak slices dry with a paper towel—this helps get a good sear. Toss them with cracked black pepper and a bit of salt. In a large skillet over medium-high heat, melt the olive oil and butter. Add the steak and let it sear undisturbed for 2–3 minutes per side. Toss in the minced garlic in the final minute so it doesn’t burn. Once the steak is browned and fragrant, transfer it to a plate.
  2. Boil the tortellini a separate pot, cook the cheese tortellini according to the package directions. Drain and set aside. Don’t forget to save about ¼ cup of the pasta water—it can help thin out the sauce later if needed.
  3. Make the Creamhouse sauce the same skillet used for the steak, melt more butter and sauté the minced garlic over medium-low heat until golden and fragrant. Slowly pour in the heavy cream, whisking gently. Stir in parmesan, onion powder, paprika, and season with salt and pepper. Let it simmer until it thickens slightly (about 5–6 minutes). Stir frequently to avoid scorching.
  4. Combine everything the cooked tortellini to the sauce, tossing gently to coat. Add the seared steak slices back into the skillet and stir them in. If the sauce is too thick, use a splash of reserved pasta water to loosen it up.
  5. Garnish and serve freshly chopped parsley over the top and serve warm. It’s divine on its own or with a side of crusty bread to mop up that luscious sauce.
