Ingredients

  • 12 oz linguine or fettuccine
  • 1 lb shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt & pepper, to taste
  • 1 tsp paprika (optional)
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup half-and-half (or milk)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Pinch red pepper flakes (optional)
  • 1 tbsp fresh parsley (chopped)

Instructions

  1. Boil salted water and cook pasta until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Heat olive oil and 1 tbsp butter in a pan. Season shrimp with salt, pepper, and paprika. Sauté shrimp until pink (1–2 min each side), then remove shrimp and set aside.
  3. In the same pan, add 2 tbsp butter and sauté garlic until fragrant (30 sec). Stir in heavy cream and half-and-half, then add Parmesan, Italian seasoning, garlic powder, and pepper flakes. Simmer for 3–5 minutes until thickened, seasoning with salt and pepper. (Add a splash of pasta water if too thick.)
  4. Add pasta to sauce and toss to coat. Add shrimp back in and let everything heat together for 1 minute.
  5. Top with parsley and extra Parmesan, then serve immediately.

Notes

  • For extra flavor, add a splash of white wine after garlic.
  • Don’t overcook shrimp — they turn rubbery fast.
  • Substitute chicken or salmon instead of shrimp.
  • Use cream cheese for extra richness.
  • Add spinach or mushrooms for veggies.
  • Refrigerate leftovers for up to 3 days.
  • Reheat gently with a splash of milk or cream as the sauce thickens in the fridge.
