A delicious and creamy pasta dish featuring chicken, spinach, artichokes, and Parmesan cheese.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cups fresh spinach
  • 1 can (14 oz) marinated artichoke hearts, drained
  • 12 oz penne or fusilli pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Cook chicken breasts for 6-7 minutes per side until golden brown. Remove from skillet and add minced garlic.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Add cooked pasta and grated Parmesan to the skillet, stirring until well coated in the sauce. If needed, add a little reserved pasta water to loosen the sauce.
  5. Plate your Spinach Artichoke Pasta with Chicken and sprinkle with extra Parmesan if desired. Serve hot.

Notes

  • This recipe can be easily customized by adding vegetables or using different types of pasta.
  • Make sure to reserve some pasta water as it can help achieve a creamy consistency for the sauce.
