Description
A delicious and creamy pasta dish featuring chicken, spinach, artichokes, and Parmesan cheese.
Ingredients

- 3–4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 1 can (14 oz) marinated artichoke hearts, drained
- 12 oz penne or fusilli pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
- Heat olive oil in a skillet over medium heat. Cook chicken breasts for 6-7 minutes per side until golden brown. Remove from skillet and add minced garlic.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Add cooked pasta and grated Parmesan to the skillet, stirring until well coated in the sauce. If needed, add a little reserved pasta water to loosen the sauce.
- Plate your Spinach Artichoke Pasta with Chicken and sprinkle with extra Parmesan if desired. Serve hot.
Notes
- This recipe can be easily customized by adding vegetables or using different types of pasta.
- Make sure to reserve some pasta water as it can help achieve a creamy consistency for the sauce.
