A refreshing and creamy salad featuring cucumbers, tomatoes, and bacon, perfect for summer gatherings.
Ingredients

- 2 large cucumbers, sliced into rounds (or half-moons)
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely diced
- 6 strips cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- ½ cup ranch dressing (homemade or bottled)
- ¼ cup sour cream (optional, for extra creaminess)
- 2 tbsp fresh dill, chopped
- Salt & black pepper, to taste
Instructions
- Wash and slice the cucumbers and tomatoes. Dice the red onion.
- Fry or bake bacon until crispy. Drain on paper towels and crumble into pieces.
- In a small bowl, whisk together ranch dressing and sour cream. Adjust seasoning with salt and pepper.
- In a large mixing bowl, combine cucumbers, tomatoes, onion, bacon, and cheddar cheese.
- Pour the dressing over and toss until evenly coated.
- Sprinkle with fresh dill.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
Notes
- Swap cheddar for pepper jack or Colby Jack for a little kick.
- Add diced avocado or hard-boiled eggs for extra richness.
- Make it lighter by using Greek yogurt ranch.
