Ingredients

  • 2 large cucumbers, sliced into rounds (or half-moons)
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely diced
  • 6 strips cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup ranch dressing (homemade or bottled)
  • ¼ cup sour cream (optional, for extra creaminess)
  • 2 tbsp fresh dill, chopped
  • Salt & black pepper, to taste

Instructions

  1. Wash and slice the cucumbers and tomatoes. Dice the red onion.
  2. Fry or bake bacon until crispy. Drain on paper towels and crumble into pieces.
  3. In a small bowl, whisk together ranch dressing and sour cream. Adjust seasoning with salt and pepper.
  4. In a large mixing bowl, combine cucumbers, tomatoes, onion, bacon, and cheddar cheese.
  5. Pour the dressing over and toss until evenly coated.
  6. Sprinkle with fresh dill.
  7. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
