- 8 oz spaghetti or linguine
- 1 lb shrimp, peeled and deveined
- 1 cup pesto sauce
- 1 cup cherry tomatoes, halved
- ½ cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ tsp red pepper flakes (optional)
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
- Add shrimp and cook until pink and opaque (about 3-4 minutes).
- Add halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until softened.
- Reduce heat to low and stir in pesto sauce until evenly coated.
- Gently fold in the cooked pasta and freshly grated Parmesan cheese until well combined.
- Serve hot, garnished with extra Parmesan and red pepper flakes if desired.
