A delicious and refreshing layered cake made with sponge cake, mixed berries, and whipped cream.

- 1 sponge cake (store-bought or homemade)
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp gelatin powder
- 1 piece of parchment paper for lining
Instructions
- Line a round springform pan with parchment paper.
- Prepare the sponge cake according to package instructions or your favorite recipe.
- In a separate bowl, heat 1 tbsp gelatin powder gently until fully dissolved, then mix it into the whipped cream.
- Fold in mixed berries gently to maintain their shape.
- Layer half of the berry mixture over the sponge cake in the prepared mold.
- Add another layer of sponge cake, then top with the remaining berry mixture. Smooth the top.
- Chill in the refrigerator for at least four hours or overnight before serving.
Notes
- Ensure the gelatin is fully dissolved before adding to whipped cream.
- Feel free to use any combination of berries.
