Ingredients

  • 1 cup diced ham
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1/2 cup diced sweet onion
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 2 tablespoons fresh herbs (parsley or chives)
  • to taste salt and pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté diced onions and bell peppers until tender, about 5 minutes.
  3. Add the diced ham and cook for an additional 2 minutes.
  4. In a bowl, whisk together the eggs with salt and pepper until frothy. Pour over the sautéed vegetables in the skillet.
  5. Sprinkle shredded cheese and fresh herbs on top of the mixture as it begins to set around the edges.
  6. Bake in the preheated oven for 20-25 minutes or until golden brown and puffy.
  7. Let cool slightly before slicing into wedges. Serve warm.
