A delicious and easy frittata with ham, vegetables, and cheese, perfect for breakfast or brunch.

- 8 large eggs
- 1 cup diced ham
- 1 cup diced bell peppers (red, green, or yellow)
- 1/2 cup diced sweet onion
- 1 cup shredded cheese (cheddar and Monterey Jack blend)
- 2 tablespoons fresh herbs (parsley or chives)

- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In an oven-safe skillet, heat olive oil over medium heat. Sauté diced onions and bell peppers until tender, about 5 minutes.
- Add the diced ham and cook for an additional 2 minutes.
- In a bowl, whisk together the eggs with salt and pepper until frothy. Pour over the sautéed vegetables in the skillet.
- Sprinkle shredded cheese and fresh herbs on top of the mixture as it begins to set around the edges.
- Bake in the preheated oven for 20-25 minutes or until golden brown and puffy.
- Let cool slightly before slicing into wedges. Serve warm.
