- 1 lb breakfast sausage (pork or turkey)
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, chopped (optional, red or green)
- 1 (20 oz) package frozen hash browns, thawed
- 2 cups shredded cheddar cheese (divided)
- 8 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Butter or nonstick spray for greasing the dish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- In a large skillet over medium heat, cook the sausage until browned and crumbly. Add onion and bell pepper, and sauté until softened (about 5 minutes). Drain any excess grease.
- Spread the hash browns evenly over the bottom of the greased baking dish. Sprinkle with half of the cheese. Spoon the sausage mixture evenly over the cheese.
- In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, pepper, and paprika until smooth. Pour this egg mixture evenly over the sausage and hash brown layers.
- Sprinkle the remaining cheddar cheese on top. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden and bubbly.
- Let the casserole rest for 10 minutes before cutting into squares. Serve warm — perfect with hot sauce, salsa, or sour cream!
