  • 1 lb breakfast sausage (pork or turkey)
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, chopped (optional, red or green)
  • 1 (20 oz) package frozen hash browns, thawed
  • 2 cups shredded cheddar cheese (divided)
  • 8 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • Butter or nonstick spray for greasing the dish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large skillet over medium heat, cook the sausage until browned and crumbly. Add onion and bell pepper, and sauté until softened (about 5 minutes). Drain any excess grease.
  3. Spread the hash browns evenly over the bottom of the greased baking dish. Sprinkle with half of the cheese. Spoon the sausage mixture evenly over the cheese.
  4. In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, pepper, and paprika until smooth. Pour this egg mixture evenly over the sausage and hash brown layers.
  5. Sprinkle the remaining cheddar cheese on top. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden and bubbly.
  6. Let the casserole rest for 10 minutes before cutting into squares. Serve warm — perfect with hot sauce, salsa, or sour cream!
