Crispy Chicken and Baby Gold Potatoes

Description

A delicious recipe featuring marinated chicken tenderloins and crispy baby gold potatoes.


Ingredients

  • 1 pound chicken tenderloins
  • 2 Tablespoons soy sauce
  • 1 Tablespoon olive oil
  • 2 teaspoons hot sauce (optional)
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 pound baby gold potatoes
  • 1 Tablespoon olive oil
  • 2 Tablespoons butter
  • 3 cloves garlic
  • 1 sliced green onion
  • ½ teaspoon Italian seasoning
  • Optional garnish: chopped fresh parsley

Instructions

  1. In a large bowl, marinate the chicken with soy sauce, olive oil, hot sauce, pepper, garlic powder, and onion powder. (If you prefer your chicken to be thinner, you can cut the tenderloins in half.)
  2. Cut the potatoes into quarters.
  3. Parboil (partly cook) potatoes in salted boiling water for 8 minutes. They should be fork-tender.
  4. When they are done, drain them well and set them aside.
  5. Place olive oil and butter into the cast iron skillet at medium heat, add the potatoes.
  6. Fry potatoes until they are golden and cooked the way you like (it will take about 8 minutes). Be careful when frying as they are already tender; use tongs to turn them to avoid breaking.
  7. Remove the potatoes from the skillet.
  8. Place the chicken strips into the skillet. (Reserve the residual marinade for later.)
  9. Allow the strips to sit undisturbed long enough to sear on one side, then flip them over and allow the other side to sear.
  10. Add the garlic and cook until aromatic (a couple of minutes). OPTIONAL: pour remaining marinade into the skillet. The chicken is done when it reaches an internal temperature of 165F degrees.
  11. Then add the potatoes, green onion, and Italian seasoning. Cook until heated through.

Notes

  • Using tongs will help prevent the potatoes from breaking apart while frying.
  • The chicken should reach an internal temperature of 165F for safe consumption.
