A delicious and easy recipe for Garlic Parmesan Chicken and Potatoes, perfect for a family dinner.

- 1 ½ lbs (700g) chicken breast, cut into bite-size pieces
- 1 ½ lbs (700g) baby potatoes, halved
- 3 tbsp olive oil (divided)
- 4 cloves garlic, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp onion powder
- ½ tsp chili flakes (optional)
- Salt & black pepper to taste
- 4 tbsp butter, melted
- ¾ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tbsp fresh parsley, finely chopped
- ½–1 cup shredded mozzarella or more parmesan
- Extra parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Place halved baby potatoes on a baking tray. Toss with 1 ½ tbsp olive oil, salt, pepper, and ½ tsp Italian seasoning. Bake for 20 minutes.
- In a bowl, mix chicken pieces, 1 ½ tbsp olive oil, paprika, onion powder, remaining Italian seasoning, chili flakes (optional), salt & pepper, and minced garlic. Mix well to coat.
- After the potatoes have baked for 20 minutes, add the seasoned chicken pieces to the tray. Spread evenly. Return tray to oven and bake 20–25 minutes, until chicken is cooked and potatoes are golden.
- In a small bowl, mix melted butter, grated parmesan, garlic powder, and fresh parsley. Pour this mixture over the hot chicken and potatoes.
- Sprinkle mozzarella (or more parmesan) over the top. Broil for 2–4 minutes until melted and slightly golden.
- Sprinkle with fresh parsley and serve hot!
Notes
- For extra crispiness: lightly pan-sear the chicken before baking.
- You can swap chicken breast for chicken thighs.
- Add broccoli or green beans for a full meal.
