Instructions

  1. Marinate the Chicken:
    • In a large bowl, whisk together the lemon juice, olive oil, garlic, oregano, thyme, salt, black pepper, paprika, and red pepper flakes.
    • Add the chicken and toss to coat. Cover and marinate for at least 30 minutes (or up to overnight in the fridge).
  2. Prepare the Potatoes:
    • Preheat oven to 400°F (200°C).
    • In a baking dish, toss the potato wedges with a few spoonfuls of the marinade.
  3. Assemble & Roast:
    • Place the chicken on top of the potatoes, skin-side up. Pour the remaining marinade over everything.
    • Add ½ cup water or chicken broth to the pan to keep the potatoes moist.
    • Roast uncovered for 40-50 minutes, basting with pan juices halfway through, until the chicken is golden and crispy.
  4. Broil for Extra Crispiness:
    • For extra crispy skin and potatoes, broil for 2-3 minutes at the end.
  5. Serve & Garnish:
    • Sprinkle with fresh parsley and crumbled feta (if using).
    • Serve with lemon wedges and enjoy!
