  • 1 can coconut cream (chilled overnight)
  • 1 cucumber, grated and drained
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sea salt
  • 1 tablespoon olive oil

For Assembly:

  • 68 AIP flatbreads
  • 2 cups lettuce, shredded
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • Fresh herbs for garnish

Instructions

  • Make the Gyro Meat:
    • Preheat oven to 350°F (175°C)
    • Process onion in food processor until very finely chopped
    • Add meat and seasonings, process until paste-like consistency
    • Shape into a tight loaf in a 9×5 inch pan
    • Bake for 45-55 minutes or until internal temperature reaches 165°F
    • Cool completely, then slice thinly
    • Optional: Pan-fry slices until crispy edges form
  • Prepare Tzatziki Sauce:
    • Open chilled coconut cream, drain liquid
    • Mix cream with grated cucumber, dill, vinegar, salt, and oil
    • Refrigerate until ready to use
  • Assembly:
    • Warm flatbread slightly
    • Layer with gyro meat, lettuce, cucumber, onion
    • Top with tzatziki sauce
    • Roll tightly, securing with parchment if needed
