Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ cup brown sugar
- 1 large egg (at room temperature)
- ¼ cup vegetable oil (or applesauce)
- 1 cup grated carrots (fresh)
- ½ cup chopped walnuts or pecans (roughly)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, mix together the flour, baking powder, cinnamon, and brown sugar until well combined.
- In another bowl, whisk the egg and vegetable oil until smooth. Stir in the grated carrots and chopped nuts.
- Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
- Fill each muffin cup about three-quarters full with batter.
- Bake for 20-25 minutes or until golden brown. A toothpick inserted in the center should come out clean.
Notes
- For a healthier option, you can use applesauce instead of vegetable oil.
- Make sure not to overmix the batter to keep the muffins tender.
