  • 2 tablespoons honey
  • 1 tablespoon chipotle seasoning
  • 2 cloves garlic, minced
  • 8 corn tortillas (use corn for gluten-free option)
  • 1 cup ripe mango, chopped
  • 1 cup cucumber, chopped
  • 1 medium red bell pepper, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a mixing bowl, combine shrimp, honey, chipotle seasoning, and minced garlic. Toss to coat evenly and let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Add the marinated shrimp and sauté for 3 to 5 minutes until shrimp turn pink and are opaque.
  3. Chop mango, cucumber, and red bell pepper into bite-sized pieces. In a separate bowl, combine these with cilantro and lime juice, stirring gently.
  4. Heat tortillas in a dry skillet or microwave for 20 to 30 seconds until soft and pliable.
  5. Place cooked shrimp on each tortilla, top evenly with mango salsa. Garnish with extra lime juice or cilantro if desired.

Notes

  • For a spicier kick, add diced jalapeños to the mango salsa.
