- ½ cup shredded cheddar cheese (mozzarella or pepper jack also work great)
- ½ cup all-purpose flour
- 1 tsp baking powder
- 2 large eggs
- ¼ cup milk (whole or 2%)
- 2 green onions, finely chopped
- ½ tsp garlic powder
- ½ tsp paprika (or smoked paprika for a bolder flavor)
- ¼ tsp salt (adjust to taste)
- ¼ tsp black pepper
- Oil for frying (vegetable, canola, or olive oil)
Instructions
- In a large mixing bowl, combine the corn kernels, shredded cheese, green onions, garlic powder, paprika, salt, and pepper.
- Add the flour and baking powder to the mixture. Stir until the corn is well-coated with the dry ingredients.
- In a separate bowl, whisk together the eggs and milk, then pour into the corn mixture.
- Mix gently until a thick, chunky batter forms. (If it’s too runny, add a tablespoon of flour at a time until it holds together.)
- Heat about ¼ inch of oil in a large nonstick skillet over medium heat.
- Once the oil is hot, scoop about 2 tablespoons of batter per fritter and drop it into the pan.
- Flatten each mound slightly with the back of a spoon to form a patty shape.
- Cook for 2–3 minutes per side or until golden brown and crisp.
- Transfer to a paper towel–lined plate to drain excess oil.
- Serve warm with your favorite dipping sauces or drizzled with a bit of honey butter for a sweet and savory combo.

- For a spicy kick, add diced jalapeños or red chili flakes.
- For a healthier version, use whole wheat flour and minimal oil.
