Ingredients

  • 1 tsp baking powder
  • 2 large eggs
  • ¼ cup milk (whole or 2%)
  • 2 green onions, finely chopped
  • ½ tsp garlic powder
  • ½ tsp paprika (or smoked paprika for a bolder flavor)
  • ¼ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Oil for frying (vegetable, canola, or olive oil)

Instructions

  1. In a large mixing bowl, combine the corn kernels, shredded cheese, green onions, garlic powder, paprika, salt, and pepper.
  2. Add the flour and baking powder to the mixture. Stir until the corn is well-coated with the dry ingredients.
  3. In a separate bowl, whisk together the eggs and milk, then pour into the corn mixture.
  4. Mix gently until a thick, chunky batter forms. (If it’s too runny, add a tablespoon of flour at a time until it holds together.)
  5. Heat about ¼ inch of oil in a large nonstick skillet over medium heat.
  6. Once the oil is hot, scoop about 2 tablespoons of batter per fritter and drop it into the pan.
  7. Flatten each mound slightly with the back of a spoon to form a patty shape.
  8. Cook for 2–3 minutes per side or until golden brown and crisp.
  9. Transfer to a paper towel–lined plate to drain excess oil.
  10. Serve warm with your favorite dipping sauces or drizzled with a bit of honey butter for a sweet and savory combo.
