Ingredients

  • 4 oz (½ block) cream cheese, softened
  • 2 jalapeños, diced (seeded for mild, keep seeds for more heat)
  • ¼ cup shredded cheddar cheese
  • ¼ cup shredded Monterey Jack or mozzarella cheese
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper, to taste
  • 4 slices thick-cut bread (Texas toast or sourdough)
  • 46 slices cooked crispy bacon
  • 4 tbsp butter (softened, for spreading)
  • ½ cup shredded cheddar cheese (for layering inside)

Instructions

  1. In a small bowl, mix together the softened cream cheese, diced jalapeños, shredded cheeses, garlic powder, onion powder, salt, and pepper until well combined.
  2. Lay out your bread slices.
  3. Spread a generous layer of the jalapeño filling on two slices.
  4. Top each with crispy bacon slices.
  5. Sprinkle extra shredded cheddar on top of the bacon.
  6. Close the sandwiches with the remaining bread slices.
  7. Spread butter on the outside of each slice of bread (both tops and bottoms).
  8. Heat a skillet or griddle over medium-low heat.
  9. Place the sandwiches in the pan and cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese inside is melted and gooey.
  10. Slice in half, serve warm, and enjoy!
