Description
A deliciously spicy twist on a classic grilled cheese sandwich, featuring jalapeños and creamy cheeses.
Ingredients

- 4 oz (½ block) cream cheese, softened
- 2 jalapeños, diced (seeded for mild, keep seeds for more heat)
- ¼ cup shredded cheddar cheese
- ¼ cup shredded Monterey Jack or mozzarella cheese
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Salt and pepper, to taste
- 4 slices thick-cut bread (Texas toast or sourdough)
- 4–6 slices cooked crispy bacon
- 4 tbsp butter (softened, for spreading)
- ½ cup shredded cheddar cheese (for layering inside)
Instructions
- In a small bowl, mix together the softened cream cheese, diced jalapeños, shredded cheeses, garlic powder, onion powder, salt, and pepper until well combined.
- Lay out your bread slices.
- Spread a generous layer of the jalapeño filling on two slices.
- Top each with crispy bacon slices.
- Sprinkle extra shredded cheddar on top of the bacon.
- Close the sandwiches with the remaining bread slices.
- Spread butter on the outside of each slice of bread (both tops and bottoms).
- Heat a skillet or griddle over medium-low heat.
- Place the sandwiches in the pan and cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese inside is melted and gooey.
- Slice in half, serve warm, and enjoy!
Notes
- Add a drizzle of hot honey for a sweet-spicy twist.
- Use pepper jack cheese for an extra kick.
- Cover the skillet with a lid for a minute while grilling for extra meltiness.
