A deliciously spicy twist on a classic grilled cheese sandwich, featuring jalapeños, creamy cheeses, and crispy bacon.

- 4 slices thick-cut bread (Texas toast or sourdough)
- 4 oz cream cheese, softened
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack or mozzarella cheese
- 2–3 jalapeños, seeded and finely chopped
- 4–6 slices cooked bacon, crispy
- 2 tbsp mayonnaise or butter (for toasting bread)
- ½ tsp garlic powder
- ½ tsp onion powder
- Pinch of salt and pepper
Instructions
- In a bowl, mix together cream cheese, chopped jalapeños, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
- Spread the jalapeño cream cheese mixture on one slice of bread. Layer with bacon strips and shredded cheeses. Top with the second slice of bread.
- Spread butter or mayo on the outer sides of each sandwich. Heat a skillet or griddle over medium-low heat. Cook each sandwich for 3–4 minutes per side, pressing gently until golden brown and the cheese has melted through.
- Slice in half and serve hot with ranch dressing or chipotle mayo for dipping, and tomato soup or coleslaw on the side.
