Ingredients

  • 4 slices thick-cut bread (Texas toast or sourdough)
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack or mozzarella cheese
  • 23 jalapeños, seeded and finely chopped
  • 46 slices cooked bacon, crispy
  • 2 tbsp mayonnaise or butter (for toasting bread)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Pinch of salt and pepper

Instructions

  1. In a bowl, mix together cream cheese, chopped jalapeños, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
  2. Spread the jalapeño cream cheese mixture on one slice of bread. Layer with bacon strips and shredded cheeses. Top with the second slice of bread.
  3. Spread butter or mayo on the outer sides of each sandwich. Heat a skillet or griddle over medium-low heat. Cook each sandwich for 3–4 minutes per side, pressing gently until golden brown and the cheese has melted through.
  4. Slice in half and serve hot with ranch dressing or chipotle mayo for dipping, and tomato soup or coleslaw on the side.
