Korean BBQ Meatballs are a delicious and flavorful dish that combines ground meat with a savory sauce, perfect for appetizers or main courses.

- 1 lb ground beef (or ground pork, or a mix)
- ½ cup breadcrumbs (panko preferred)
- 1 egg
- 3 green onions, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp gochujang (Korean chili paste) or sriracha (optional for spice)
- Salt & black pepper, to taste
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1–2 tbsp gochujang (adjust to spice level)
- 1 tbsp cornstarch + 2 tbsp water (slurry, for thickening)
- Sliced green onions
- Toasted sesame seeds
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- In a large bowl, combine beef, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, gochujang, salt, and pepper. Mix until just combined (don’t overmix).
- Roll into 1 ½-inch meatballs and place on the baking sheet.
- Bake for 15–18 minutes, until cooked through and browned.
- In a saucepan over medium heat, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and gochujang.
- Bring to a simmer. Stir in cornstarch slurry and cook until thickened (2–3 minutes).
- Toss cooked meatballs in the sauce until well coated.
- Garnish with green onions and sesame seeds.
Notes
- Serve as an appetizer with toothpicks.
- Pair with steamed rice and stir-fried veggies for a main dish.
- Use in lettuce wraps with kimchi for a fresh twist.
