Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the lemon cake mix, eggs, and oil. Stir until a thick dough forms. (Add lemon extract here if using.)
- Scoop out tablespoons of dough, roll into balls, and coat generously in powdered sugar.
- Place dough balls on the lined baking sheet and bake for 8–10 minutes, until the edges are set but the centers are still soft.
- Allow cookies to cool on the baking sheet for 2–3 minutes before transferring to a rack. Enjoy warm, soft, lemony goodness!
