Ingredients

  • 1 small onion, finely chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 5 cups vegetable broth
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 2 cups fresh spinach or chopped kale
  • ¼ cup fresh dill, chopped
  • Zest of 1 lemon
  • ¼ cup fresh lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook for 5–7 minutes until softened.
  2. Stir in the garlic, oregano, cumin, salt, and pepper. Cook for 30 seconds until fragrant.
  3. Add chickpeas and vegetable broth. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
  4. For a creamier texture, use an immersion blender to partially blend the soup, leaving some chickpeas whole.
  5. Stir in spinach, dill, lemon zest, and lemon juice. Simmer for 2–3 more minutes until greens are wilted.
  6. Adjust seasoning as needed and serve warm.
