- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 5 cups vegetable broth
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- Salt and black pepper, to taste
- 2 cups fresh spinach or chopped kale
- ¼ cup fresh dill, chopped
- Zest of 1 lemon
- ¼ cup fresh lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook for 5–7 minutes until softened.
- Stir in the garlic, oregano, cumin, salt, and pepper. Cook for 30 seconds until fragrant.
- Add chickpeas and vegetable broth. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
- For a creamier texture, use an immersion blender to partially blend the soup, leaving some chickpeas whole.
- Stir in spinach, dill, lemon zest, and lemon juice. Simmer for 2–3 more minutes until greens are wilted.
- Adjust seasoning as needed and serve warm.

- Extra Creamy: Add ¼ cup blended chickpeas instead of cream
