Description
Deliciously roasted carrots glazed with maple syrup and herbs.
Ingredients
Scale
- 1 lb large carrots (peeled or scrubbed; approx. 450 g)
- 2 cloves garlic (finely minced; approx. 6 g)
- 2 tbsp olive oil (approx. 30 ml)
- 2 tbsp vegan butter (approx. 28 g)
- 3 tbsp pure maple syrup (approx. 45 ml)
- ½ tsp dried thyme (approx. 0 g)
- ½ tsp dried oregano or dried rosemary (approx. 0 g)
- 1 g fine sea salt (to taste; approx. 1–2 g)
- 1 g freshly ground black pepper (to taste; approx. 1–2 g)
Instructions
- Preheat oven to 400°F (200°C).
- Peel carrots, trim the ends, and slice in half lengthwise. Place in a large roasting dish.
- In a small bowl, whisk together olive oil, maple syrup, thyme, oregano (or rosemary), salt, and pepper.
- Pour mixture over carrots and toss until evenly coated.
- Cut the butter into small pats and scatter over the top.
- Roast for 40–50 minutes, tossing once or twice, until the carrots are tender and caramelized.
- Remove from the oven, toss once more in the glaze, and adjust seasoning if needed.
- Transfer to a serving platter and garnish with a fresh sprig of rosemary.
Notes
- For a spicier kick, add a pinch of cayenne pepper.
- Make sure that the carrots are evenly coated for optimal flavor.
