Roasted Carrots with Maple Syrup

Description

Deliciously roasted carrots glazed with maple syrup and herbs.


Ingredients

  • 1 lb large carrots (peeled or scrubbed; approx. 450 g)
  • 2 cloves garlic (finely minced; approx. 6 g)
  • 2 tbsp olive oil (approx. 30 ml)
  • 2 tbsp vegan butter (approx. 28 g)
  • 3 tbsp pure maple syrup (approx. 45 ml)
  • ½ tsp dried thyme (approx. 0 g)
  • ½ tsp dried oregano or dried rosemary (approx. 0 g)
  • 1 g fine sea salt (to taste; approx. 12 g)
  • 1 g freshly ground black pepper (to taste; approx. 12 g)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel carrots, trim the ends, and slice in half lengthwise. Place in a large roasting dish.
  3. In a small bowl, whisk together olive oil, maple syrup, thyme, oregano (or rosemary), salt, and pepper.
  4. Pour mixture over carrots and toss until evenly coated.
  5. Cut the butter into small pats and scatter over the top.
  6. Roast for 40–50 minutes, tossing once or twice, until the carrots are tender and caramelized.
  7. Remove from the oven, toss once more in the glaze, and adjust seasoning if needed.
  8. Transfer to a serving platter and garnish with a fresh sprig of rosemary.

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
  • Make sure that the carrots are evenly coated for optimal flavor.
