Ingredients

  • 4 boneless, skinless chicken breasts (or thighs if preferred)
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp dried thyme (or 1 tsp fresh thyme leaves)
  • ⅓ cup pure maple syrup
  • 2 tbsp Dijon mustard (or grainy mustard)
  • 1 tbsp soy sauce
  • 2 tbsp apple cider vinegar (or lemon juice)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp fresh chopped rosemary (optional but delicious)
  • Fresh parsley or thyme (for garnish)
  • Extra drizzle of maple syrup (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, garlic powder, paprika, and thyme. Place them evenly in the baking dish.
  3. Pat chicken dry and season both sides with salt and pepper. Arrange them on top of the sweet potatoes.
  4. In a small saucepan over medium heat, melt the butter. Add garlic and sauté for about 30 seconds until fragrant.
  5. Stir in maple syrup, Dijon mustard, soy sauce, apple cider vinegar, and rosemary. Let it simmer for 2–3 minutes until slightly thickened. Remove from heat.
  6. Pour half of the maple glaze evenly over the chicken and sweet potatoes. Bake uncovered for 25 minutes.
  7. Remove from oven, brush or spoon the remaining glaze over the chicken, and bake another 10–15 minutes, until the chicken reaches 165°F (74°C) and sweet potatoes are tender.
  8. Optional: Broil for 2–3 minutes to create a golden, sticky glaze on top. Watch closely so it doesn’t burn!
  9. Spoon some of the pan juices over the chicken. Garnish with fresh parsley or thyme. Serve hot and enjoy!
