A delicious and easy recipe for Maple-Glazed Chicken with Sweet Potatoes that combines sweet and savory flavors for a perfect meal.

- 4 boneless, skinless chicken breasts (or thighs if preferred)
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp dried thyme (or 1 tsp fresh thyme leaves)
- ⅓ cup pure maple syrup
- 2 tbsp Dijon mustard (or grainy mustard)
- 1 tbsp soy sauce
- 2 tbsp apple cider vinegar (or lemon juice)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 tsp fresh chopped rosemary (optional but delicious)
- Fresh parsley or thyme (for garnish)
- Extra drizzle of maple syrup (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, garlic powder, paprika, and thyme. Place them evenly in the baking dish.
- Pat chicken dry and season both sides with salt and pepper. Arrange them on top of the sweet potatoes.
- In a small saucepan over medium heat, melt the butter. Add garlic and sauté for about 30 seconds until fragrant.
- Stir in maple syrup, Dijon mustard, soy sauce, apple cider vinegar, and rosemary. Let it simmer for 2–3 minutes until slightly thickened. Remove from heat.
- Pour half of the maple glaze evenly over the chicken and sweet potatoes. Bake uncovered for 25 minutes.
- Remove from oven, brush or spoon the remaining glaze over the chicken, and bake another 10–15 minutes, until the chicken reaches 165°F (74°C) and sweet potatoes are tender.
- Optional: Broil for 2–3 minutes to create a golden, sticky glaze on top. Watch closely so it doesn’t burn!
- Spoon some of the pan juices over the chicken. Garnish with fresh parsley or thyme. Serve hot and enjoy!

- Pair with a crisp green salad, roasted Brussels sprouts, or garlic butter green beans.
