Ingredients

- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp nutmeg
- ¼ tsp salt
- ½ cup (1 stick) unsalted butter, melted
- ½ cup brown sugar
- ¼ cup granulated sugar
- ¾ cup pumpkin purée (not pumpkin pie filling)
- ¼ cup pure maple syrup
- 1 tsp vanilla extract
- 1 large egg yolk
- Optional for rolling: ¼ cup granulated sugar mixed with ½ tsp cinnamon
Instructions
- Preheat Oven: Heat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
- Mix Wet Ingredients: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add pumpkin purée, maple syrup, vanilla, and egg yolk. Mix until fully combined.
- Combine: Gradually add the dry ingredients into the wet mixture, stirring until just combined. The dough will be soft and sticky.
- Shape Cookies: Scoop 1½ tablespoon portions of dough, roll into balls, and coat with the cinnamon-sugar mix (optional).
- Bake: Place on baking sheet about 2 inches apart. Bake for 10–12 minutes, or until the edges are set and tops look slightly crackled.
- Cool & Serve: Allow cookies to cool for 5 minutes on the pan before transferring to a wire rack.
- Optional Maple Glaze: Mix 1 cup powdered sugar, 2 tbsp maple syrup, and 1 tbsp milk until smooth. Drizzle over cooled cookies for a glossy maple finish!

- Ensure to use pure pumpkin purée, not pumpkin pie filling for the best results.
- Cookies can be stored in an airtight container for up to a week.
- For a richer flavor, consider adding chopped nuts or chocolate chips.
