  • ¾ cup pumpkin purée (not pumpkin pie filling)
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 large egg yolk
  • Optional for rolling: ¼ cup granulated sugar mixed with ½ tsp cinnamon

Instructions

  1. Preheat Oven: Heat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Mix Wet Ingredients: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add pumpkin purée, maple syrup, vanilla, and egg yolk. Mix until fully combined.
  4. Combine: Gradually add the dry ingredients into the wet mixture, stirring until just combined. The dough will be soft and sticky.
  5. Shape Cookies: Scoop 1½ tablespoon portions of dough, roll into balls, and coat with the cinnamon-sugar mix (optional).
  6. Bake: Place on baking sheet about 2 inches apart. Bake for 10–12 minutes, or until the edges are set and tops look slightly crackled.
  7. Cool & Serve: Allow cookies to cool for 5 minutes on the pan before transferring to a wire rack.
  8. Optional Maple Glaze: Mix 1 cup powdered sugar, 2 tbsp maple syrup, and 1 tbsp milk until smooth. Drizzle over cooled cookies for a glossy maple finish!
