- 2 cans (15 oz each) chickpeas, drained and rinsed

- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 cup full-fat coconut milk or cashew cream
- ½ cup vegetable broth
- 2 cups fresh spinach
- 1 tablespoon nutritional yeast (optional, for depth)
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook until fragrant, about 30 seconds.
- Stir in sun-dried tomatoes, chickpeas, Italian seasoning, paprika, salt, and pepper.
- Pour in coconut milk and vegetable broth. Stir well and bring to a gentle simmer.
- Let the chickpeas cook uncovered for 10–15 minutes, allowing the sauce to thicken.
- Stir in spinach and nutritional yeast (if using). Cook until wilted.
- Taste and adjust seasoning. Garnish with fresh herbs and serve warm.
