Matilda Chocolate Cake

Description

Inspired by the decadent, fudgy chocolate cake from Matilda, this rich, moist, and ultra-chocolatey cake is the ultimate dessert for chocoholics!


Ingredients

  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • ¾ cup unsweetened cocoa powder

  • 1 ½ teaspoons baking powder

  • 1 ½ teaspoons baking soda

  • 1 teaspoon salt

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 cup hot brewed coffee


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate bowl, mix buttermilk, oil, eggs, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients. Mix until just combined.

  5. Slowly pour in the hot coffee, mixing until smooth. The batter will be thin.

  6. Pour batter evenly into the prepared pans.

  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  8. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.

  9. Once completely cool, frost with your choice of frosting. Chocolate buttercream is highly recommended.

Notes

  • Do not overmix the batter. This can make the cake tough.

  • Do not skip the coffee. It enhances the chocolate flavor.

  • If you don’t have buttermilk, you can make your own. Add 1 tablespoon of lemon juice or white vinegar to a measuring cup, then add enough milk to reach 1 cup. Let it sit for 5 minutes.
