A refreshing and flavorful Mexican Street Corn Pasta Salad perfect for summer gatherings.
Ingredients

- 3 cups cooked rotini or any short pasta
- 2 cups sweet corn (grilled, canned, or frozen & thawed)
- 1/2 cup red onion, diced
- 1 cup cherry tomatoes, halved (optional)
- 1/3 cup chopped cilantro
- 1/2 cup crumbled Cotija cheese (or feta)
- 1 cup mayonnaise
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp lime zest (optional but amazing!)
- 1–2 tsp chili powder
- 1/2 tsp smoked paprika (optional)
- 1/4 tsp garlic powder
- Salt & pepper to taste
Instructions
- Cook the Pasta: Boil pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
- Prepare the Dressing: In a medium bowl, mix together mayonnaise, lime juice, lime zest, chili powder, garlic powder, smoked paprika, salt, and pepper. Whisk until smooth and creamy.
- Mix the Salad: In a large bowl combine cooked pasta, sweet corn, red onion, cherry tomatoes, and cilantro. Pour the dressing over and toss until everything is evenly coated.
- Add the Cheese: Add Cotija cheese on top and gently fold it in. Add extra chili powder or cilantro for garnish.
- Chill & Serve: Chill for 20–30 minutes for best flavor. Serve cold or slightly chilled.
Notes
- For authentic street-corn flavor, grill or sauté the corn until slightly charred.
- Substitute Mexican crema for half the mayo for even richer taste.
- Cotija cheese can be replaced with feta or queso fresco.
