Mini Cinnamon Roll Cheesecakes are a delightful combination of creamy cheesecake and cinnamon roll flavors, perfect for a sweet treat.

- 1 cup graham cracker crumbs (or crushed cinnamon graham crackers)
- 1 tablespoon granulated sugar
- 1 ½ teaspoons ground cinnamon
- 4 tablespoons unsalted butter, melted
- 16 oz (2 packages) cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, room temperature
- ½ cup sour cream
- 2 tablespoons unsalted butter, melted
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ½ cup powdered sugar
- 1–2 tablespoons milk or heavy cream
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (165°C). Line a 12-cup muffin tin with cupcake liners and lightly spray each liner with nonstick cooking spray.
- In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter until combined. Divide the mixture evenly between the muffin cups (about 1 tablespoon per cup) and press down firmly to form the crust. Bake for 5 minutes, then remove from the oven and let cool slightly.
- In a small bowl, mix together melted butter, brown sugar, and cinnamon for the cinnamon swirl. Set aside.
- Beat cream cheese and sugar in a large bowl until smooth and creamy (about 2 minutes). Add vanilla extract and sour cream, mixing until smooth. Add eggs, one at a time, beating on low speed until just combined.
- Spoon about 1 ½ tablespoons of cheesecake batter into each muffin cup. Add ½ teaspoon of the cinnamon swirl mixture on top, then add another layer of cheesecake batter and swirl gently with a toothpick for a marbled effect.
- Bake for 18–20 minutes, or until centers are just set. Turn off the oven, crack the door open, and let them cool in the oven for 10 minutes. Transfer to the fridge and chill for at least 3 hours, or overnight.
- Mix powdered sugar, milk, and vanilla until smooth. Drizzle over chilled cheesecakes before serving.

- Crust swap: Try crushed cinnamon rolls, Oreos, or Biscoff cookies instead of graham crackers.
- Extra cinnamon flavor: Add ½ teaspoon cinnamon to the cheesecake batter itself.
