Ingredients

  • 8 oz (225g) cream cheese, softened
  • ½ cup creamy peanut butter
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup graham cracker crumbs (or digestive biscuit crumbs)
  • 1 ½ cups dark or semi-sweet chocolate chips
  • 1 tbsp coconut oil (optional, for smoother melting)
  • 2 tbsp creamy peanut butter (for drizzle)
  • 12 tsp melted coconut oil (to thin drizzle)
  • Chopped peanuts (for topping)
  • Extra graham crumbs (optional, for topping)

Instructions

  1. In a large bowl, beat cream cheese until smooth. Add peanut butter, powdered sugar, and vanilla. Mix until creamy and fully combined. Stir in the graham cracker crumbs to thicken the mixture.
  2. Scoop out about 1 tablespoon of mixture and roll into smooth balls. Place on a lined baking tray. Chill or freeze for 20–30 minutes to firm up.
  3. In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring until smooth. You can also melt using a double boiler.
  4. Remove chilled balls from freezer and dip each one into melted chocolate using a fork. Place back onto tray.
  5. Mix melted peanut butter with a little coconut oil to thin and drizzle over the chocolate-coated balls. Sprinkle chopped peanuts on top before the chocolate sets.
  6. Refrigerate for 20–30 minutes until the chocolate hardens. Store in the fridge for up to 5 days or freezer for 1 month.
