Description
A comforting beef pot pie made with hearty beef stew meat and a flaky crust.

- 1 1/2 pounds beef stew meat
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup frozen corn
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1/2 cup milk or heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 prepared pie crusts
- 1 egg, beaten
Instructions
- Heat butter in a large skillet over medium-high heat and brown beef on all sides. Tip: do not overcrowd the pan for best browning.
- Add onion, carrots, and garlic and cook until softened, about 5 minutes.
- Sprinkle flour over mixture and stir well, then slowly add beef broth while stirring to form a smooth gravy.
- Stir in milk, salt, pepper, and thyme and simmer until thickened. Tip: add extra broth if too thick.
- Fold in peas and corn and remove from heat.
- Place one pie crust into a pie dish and fill with beef mixture, then top with second crust and crimp edges.
- Brush crust with beaten egg, cut small slits, and bake at 400°F for 35 to 40 minutes until golden.
- Let rest 10 minutes before slicing.
Notes
- For best results, do not overcrowd the pan when browning the beef.
- You can add more beef broth if the mixture is too thick.
