Description

Deliciously fluffy orange muffins bursting with citrus flavor.


Ingredients

  • 3 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 3 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • Zest of 3 oranges (35 Tbsp)
  • ¼ cup fresh squeezed orange juice

Instructions

  1. Preheat your oven to 425ºF and line a muffin pan with liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, buttermilk, oil, orange zest, and juice.
  4. Combine wet and dry ingredients gently until just mixed; do not overmix.
  5. Let the batter rest for 15 minutes.
  6. Fill muffin liners to the top and bake for 7 minutes at 425ºF; then reduce temperature to 350ºF and bake for an additional 13-16 minutes until golden brown.

Notes

  • For best results, do not overmix the batter.
  • These muffins can be served warm or at room temperature.
