Deliciously fluffy orange muffins bursting with citrus flavor.
Ingredients

- 3 cups all-purpose flour
- 1 ½ cups granulated sugar
- 3 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ¾ cup buttermilk
- ½ cup vegetable oil
- Zest of 3 oranges (3–5 Tbsp)
- ¼ cup fresh squeezed orange juice
Instructions
- Preheat your oven to 425ºF and line a muffin pan with liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, buttermilk, oil, orange zest, and juice.
- Combine wet and dry ingredients gently until just mixed; do not overmix.
- Let the batter rest for 15 minutes.
- Fill muffin liners to the top and bake for 7 minutes at 425ºF; then reduce temperature to 350ºF and bake for an additional 13-16 minutes until golden brown.
Notes
- For best results, do not overmix the batter.
- These muffins can be served warm or at room temperature.
