Ingredients

- 3/4 cup peanut butter
- 1/2 cup unsalted butter (softened)
- 1/4 cup sugar
- 3/4 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper or nonstick spray.
- In a mixing bowl, cream together peanut butter, softened butter, sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, sift together flour, baking soda, and salt; gradually add to the wet mixture until just combined.
- Roll the dough into 1-inch balls, place them on the baking sheet, and create criss-cross patterns with a fork.
- Bake for about 10 minutes or until lightly browned. Allow cooling on the pan for a few minutes before transferring to a wire rack.
Notes
- For a richer flavor, use a mixture of smooth and crunchy peanut butter.
- Store cookies in an airtight container to keep them fresh.
