Instructions

  1. Cook the Tortellini: Start by boiling a large pot of salted water. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers, and sauté for about 5-7 minutes, until they’re tender and slightly caramelized. Add the minced garlic and cook for another minute until fragrant.
