Delicious fajitas made with marinated flank steak and colorful bell peppers.
Ingredients

- 1 lb flank steak
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp taco seasoning
- 2 tbsp olive oil (divided)
- 4 large flour tortillas (or corn for gluten-free)
- Juice of 1 lime
- Salsa and sour cream (optional)
Instructions
- Slice flank steak against the grain into thin strips. Prepare bell peppers and onion by slicing them thinly.
- Marinate the steak in a bowl with taco seasoning and 1 tbsp olive oil for at least 30 minutes.
- Preheat your Blackstone griddle to medium-high heat.
- Once hot, add remaining olive oil and sear the marinated steak in a single layer for about 3-4 minutes on each side until browned.
- Add the sliced bell peppers and onion to the griddle; stir-fry for about 5-7 minutes until softened but still crunchy.
- Squeeze fresh lime juice over the mixture before serving.
- Serve hot with warm tortillas, allowing everyone to build their own fajitas with optional salsa and sour cream.
