Description

Delicious fajitas made with marinated flank steak and colorful bell peppers.


Ingredients

  • 1 lb flank steak
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp taco seasoning
  • 2 tbsp olive oil (divided)
  • 4 large flour tortillas (or corn for gluten-free)
  • Juice of 1 lime
  • Salsa and sour cream (optional)

Instructions

  1. Slice flank steak against the grain into thin strips. Prepare bell peppers and onion by slicing them thinly.
  2. Marinate the steak in a bowl with taco seasoning and 1 tbsp olive oil for at least 30 minutes.
  3. Preheat your Blackstone griddle to medium-high heat.
  4. Once hot, add remaining olive oil and sear the marinated steak in a single layer for about 3-4 minutes on each side until browned.
  5. Add the sliced bell peppers and onion to the griddle; stir-fry for about 5-7 minutes until softened but still crunchy.
  6. Squeeze fresh lime juice over the mixture before serving.
  7. Serve hot with warm tortillas, allowing everyone to build their own fajitas with optional salsa and sour cream.
