- 3 ripe bananas, mashed
- ⅓ cup unsalted butter, melted
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup milk (dairy or non-dairy)
Instructions
- Preheat oven to 375°F (190°C) and prepare a muffin tin with liners.
- In a large bowl, mash the ripe bananas until mostly smooth.
- Mix in melted butter, sugar, eggs, and vanilla until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture until just combined.
- Gently fold in milk until incorporated.
- If desired, stir in optional add-ins like chocolate chips or nuts.
- Fill muffin cups about ¾ full with batter.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool briefly in the tin before transferring to a wire rack.
Notes
- Store muffins in an airtight container at room temperature for up to 3 days.
- These muffins can be frozen for longer storage.
