Description

Delicious banana muffins made with ripe bananas and simple ingredients.


Ingredients

  • 3 ripe bananas, mashed
  • ⅓ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup milk (dairy or non-dairy)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Mix in melted butter, sugar, eggs, and vanilla until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Gently fold in milk until incorporated.
  7. If desired, stir in optional add-ins like chocolate chips or nuts.
  8. Fill muffin cups about ¾ full with batter.
  9. Bake for 18–22 minutes or until a toothpick comes out clean.
  10. Cool briefly in the tin before transferring to a wire rack.
